Fighting off no less than eight competitors, Matthew Burr triumphed as the winner of Heinz Foodservice's Best of British Challenge.
The competition, which took place at the Hospitality Show at the NEC in Birmingham, involved contestants creating two versions of a dish that had to make use of the best of British produce.
All the competitors also had to use of one of Heinz's traditional ready to use sauces in their dishes.
Commenting on the event, Claire Kemp, brand manager for Heinz Foodservice, said the competition entrants could "experience the versatility of the Heinz Ready to Use range, which paves the way for changing menus regularly and adding value to the eating out experience by ensuring consumer demand for variety is answered".
Mr Burr won a luxury brake worth £800 for his roast saddle of venison served with a stilton flavoured potato bake and lightly spiced red cabbage with a port and wine jus.
He added the Heinz traditional ready to use classic red wine sauce to his dish.
In November 2008 Loris Lucchini from The Chesterfield in Mayfair won the Heinz Foodservice-sponsored hotel restaurant manager of the year award.
